There’s nothing like the taste of a salad fresh from your garden. Not many people know that salad is one of the best values you can get from your MinifarmBox™ because you can cut it when it’s young and it will come back 2 or 3 times. That’s what baby greens are.

Italian Arugula (Eruca vesicaria var. sativa)

Arugula is one of my favorite things to eat. There is something about the unique spicy flavor that makes it so irresistible that it rarely gets from my garden to the kitchen before it’s eaten.

This classic variety has uniquely flavored, deeply lobed 3-6″ leaves that get spicier as they get older. Adds zest to salad mixes, or use on its own. Comes up fast and is super easy to grow even in a shady garden.

Tres Fine Maraichere Endive (Cichorium endivia)

Endive, also known as escarole, is a leafy vegetable prized for its mildly bitter leaves and attractive appearance. It is thought to have originated in the eastern Mediterranean region from wild chicory.

Tres Fine Maraichere is a classic endive variety from France. It forms soft, green mounds of fern-like foliage that adds wonderful texture to salad mixes and its tangy flavor is a welcome surprise. Endive does not store well, so it’s a terrific salad green to grow in the home garden and eaten fresh.

Buttercrunch Lettuce (Lactuca sativa)

Buttercrunch is a heat-resistant lettuce variety that produces dark green leaves and a compact head. It’s a flavorful, reliable variety that is slow to bolt. A great lettuce variety for cutting and coming back.

Speckled Lettuce (Lactuca sativa)

The origins of the Speckled Lettuce date back to 1660 in Holland. From Holland, the lettuce was brought to Germany, where it was widely cultivated. In the late 1790s the Speckled lettuce was brought to North America. This lettuce is a looseleaf variety that has juicy, thick, light green leaves that are speckled with maroon quarter-inch dots. The speckled leaves have a pleasant flavor, which is similar to watercress.

Amish Deer Tongue Lettuce (Lactuca sativa)

Amish Deer Tongue lettuce a is looseleaf variety that dates to 1840. The name, deer tongue, comes from its pointed leaves that are triangularly shaped with green straight edges. Because of its heat tolerance, it is slow bolting under high temperatures. The lettuce has a thin midrib, good texture and wonderful flavor that is pleasantly sharp. This plant is great for home gardeners as it is tolerant of different climates.

Mesclun Salad Mix

This classic is an abundant potpourri of color, shape, taste, and texture. Harvest a new combination each day. Early greens (Arugula, Purple Wave Mustard, Red Russian Kale, and Très Fin Endive) complement an assortment of lettuces (Rouge D’hiver, Speckled, Red Salad Bowl, Buttercrunch, and Simpson Black-Seeded).

These lettuces are incredibly productive. Try cutting the tops off 2” above soil when half grown and watch then grow back 2 or three times
